Brookies Recipe – Brownie + Chocolate Chip Cookie

 Place 1/3 cup of butterand 1/3 a cup of chopped chocolate or chocolate chips in a bowl. Melt themtogether by microwaving for 30 second intervals and whisking until completelyincorporated. Add a 1/3 cup of brown sugar to the bowl and yes, you can use granulated instead. Add 1 large egg and whisk until combined.

Add 1 teaspoon of vanilla, 3/4 cups of all-purpose flour, 2 tablespoons of cocoa powder and 1/4teaspoon of salt. Whisk until completely incorporated. Then cover the bowl withplastic wrap and place it in the fridge for 1 to 2 hours to firm up. Now let’s make the cookie dough. Begin by creaming 10 tablespoons of butter with a mixer until fluffy

. Add 3/4 cups of brown sugar and 1/4 cup of white sugar and cream for another couple of minutes. Then add one egg and one yolk and also add 2 teaspoons of vanilla and cream until incorporated. Add two and a quarter cupsof all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon ofbaking soda, 1/2 teaspoon of salt and mix until combined.

And at the end add one cup of chocolate chips and stir. To assemble the cookies grab some of thecookie dough and kind of flatten it with your hands, then scoop a smaller amountof brownie and place it in the middle of the cookie dough, then use your hands tokind of wrap the cookie dough around the brownie without covering it completely.

If the brownie is too sticky you can dip your hand in some flour to do this orplace the brownie batter back in the fridge for another little while. Place the cookies on a baking sheet and insert the baking sheet in the freezer for 10minutes or so. After the cookies are solid you can either bake them or youcan place them in a ziploc bag and keep them in the freezer and then you canjust bake them anytime you wish. No need to thaw the cookies before bakingthey will bake much better if they’re cold and solid instead ofroom-temperature.

Bake the cookies for about 12 minutes until they look slightly browned. Don’t bake them too much or you will end up with tough and dry cookies. If the cookies look baked in the oven they will be over baked becausethey continue to cook as you remove them from the oven. I also like placingchocolate chips on top of my cookies when I remove them from the oven. So that’s it! How easy was that?
