Besan ki Bharwan Mirch recipe
large chilli – 125 grams/10 gramflour – 1/4 cup oil – 4-5 tbsp salt – 3/4 tsp tumeric powder – 1/2 tsp jeera(cumin) – 1/2 tsp heeng – 2 to 3 pinch corainder(dhaniya)powder – 2 tsp saunff(fennel)powder – 2 tsp amchur(mango)powder – 1/2 tsp garam masala – 1/2 tsp first cut off the stem from the chillies. now cut it vertically from uo to down on onw side keeping them stuck together. now we will prepare the filling to be stuffen in the chillies. heat the pan. and pour 2 tbsp oil in it. put heeng,jeera into hot oil. once jeera is roasted add turmeric powder nad gramflour.
fry till gramflour turns light brown stir contnously as flour should not burn. when gramflour starts to emit a nice small it indicates that it is cooked. now add corainder powder. saunff powder and mix. fry for another 1 minute put amchur powder, garam masala, salt and mix all the spices properly. the filling is ready which now needs to b e stuffen in the chilli.
open the chilli on the cut side. and stuff it with the filling. then press repeat with all the chillies and remianing filling. now let us fry these stuffed chilies turn on the gas. pour the left over oil in the pan. place the chillies in the pan cover and allow them to cook for 2-3 minutes on a low flame. check the chillies and turn them over. chillies have to be cooked till they turn light brown on all sides and crisp as well. keep a medium flame else chillies will get burnt.
after turnign over the chillies cover the pan and cook for another 2 minutes. stuffed besan ki mirchi is ready. if you prefer more of spicy then you can have one whole chilli all by yourself if you prefer less of spicy then cut 1/4 of the chilli and eat. besan ki mirchi increases the food’s flavour more. try this recipe yourself and share ypur experiences with us. we will meet again at nishamadhulika.com
